For caviar, the usual serving size depends on whether it is served as a tasting, appetizer, or main indulgence:

10–15 g per person — tasting / light serving
20–30 g per person — standard appetizer
30–50 g per person — generous serving or caviar-focused experience

Simply put, all caviar is roe, but not all roe is caviar.

Roe refers to the eggs of any fish, such as salmon, trout or lumpfish. Caviar, traditionally, refers specifically to the purely salted untreated eggs of the female sturgeon.

What makes caviar special is not only the fish it comes from, but also the careful selection, preparation, salting and maturation of the eggs. The result is delicate pearls with a refined texture and complex flavour.

While fish roe may be enjoyed in many forms, true caviar is a class of its own.

Every caviar pearl has its own character.

The size, colour and appearance of caviar depend mainly on the species of sturgeon, its age, genetics and the stage of maturity when the roe is harvested.

Colours can range from deep charcoal and silver-grey to golden and amber tones, while pearl sizes can vary from small and delicate to large and beautifully pronounced.

And remember: bigger or lighter doesn’t necessarily mean better. What truly matters is the balance of texture, flavour, freshness and finish.
